Balsamic Spinach & Feta Salad

This delicious salad is a perfect complement to fall and winter recipes. Anchored by a bed of spinach, it features a light vinaigrette, chunks of apples and candied pecans topped with feta cheese. A crowd pleaser for sure.

Balsamic Spinach & Feta Salad


INGREDIENTS

  • 6 cups fresh mixed leaf lettuce and spinach, washed and dried

  • ½ cup dried cranberries

  • ⅔ cup feta

  • ½ small red onion sliced

  • ½ cup candied pecans

  • 1 large apple chopped

  • honey balsamic vinaigrette


PREPARATION

For the salad

Wash lettuce and spinach leaves thoroughly then pat dry with a paper towel. Slice half of a red onion and apple into ½ inch chunks. Toss lettuce with cranberries, onion, apple, feta and pecans, then top with vinaigrette.


For the vinaigrette

  • ¼ cup light olive oil

  • 2 tbsp balsamic vinegar

  • 1 ½ tbsp honey

  • ½ tsp kosher salt

  • ½ tsp freshly ground black pepper


Combine all ingredients in a Mason jar, secure the lid, and shake to combine.
